Zucchini Muffins


Zucchini Muffins

Ingredients:
1/2 cup brown rice flour
1/2 cup sorghum flour
1/4 cup potato starch
1/4 cup tapioca starch
1/2 cup sugar
1 teaspoon xanthan gum
1 1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/3 cup vegetable oil
2 large eggs
2 tablespoons milk
1 teaspoon vanilla
1 cup shredded zucchini

Directions:
1) Combine all dry ingredients in a bowl. Make a well in the center
2) Add oil, eggs, milk, and vanilla
3) Mix well
4) Stir in zucchini
5) Spoon into greased muffins 3/4 full
6) Bake at 400 degrees for 18 minutes
